Fresh Fruit Pizza

Ingredients:

Sugar Cookie:

3/4 C Sugar
1/3 C Shortening
1 Egg
1/2 tsp Vanilla
1 Tbl. Milk
1 1/2 C Flour
1 tsp. Baking Powder
1/8 tsp Salt

Frosting:

1 (8oz) package Cream Cheese
1/2 C White Granulated Sugar
2 tsp Vanilla Extract

Topping:

1/2 Can Pineapple tidbits (optional)
1 fresh Kiwi, sliced
1/4 C Fresh Bananas, sliced
1/4 C Fresh Blueberries
1/4 C Raspberries
1/4 C fresh Mango, sliced

 

Instructions:

1. Mix sugar, shortening, egg, vanilla and milk with an electric hand mixer until creamy  2. Add dry ingredients  3. Roll onto a round pizza pan, greased. Cookie should be about 1/4-inch thick 4. Bake at 375 degree for approximately 12-15 minutes or until edges start to turn a light golden brown. 5. Cool cookie on a cooling rack for 10 minutes. Using a metal spatula, lightly loosen cookie from pan so it doesn’t stick while it cools. 6. In a large bowl, beat cream cheese with 1/2 Cup sugar and vanilla until light. No lumps. Spread on cooled cookie crust. 7. Use a variety of fruits to decorate the top. Enjoy!
