Mexican Lasagna

I always feel an urge to make something fun for each holiday during the year, and I have to say we usually just eat chips and salsa on Cinco de Mayo, lammme….. So this year I actually made something sort of mexican, & we loved it!


1.Chop the garlic and onion, and bell pepper and tomato; drain the beans and corn





2. Boil the lasagna noodles, heat the meat over medium heat: toss in chopped ingredients and heat through; lastly- Assemble!





1 lb Ground Turkey
6 Lasagna Noodles
2 cloves Garlic, minced
1/2 Onion, Chopped
1 tsp Chili Powder
1 tsp Cumin
1 tsp Cayenne
1 tsp Oregano
1 tsp Red Pepper Flakes
1 Bell Pepper (green or red), chopped
1/2 Tomato, chopped
1 Can Corn
1 Can Black Beans
2 Tbl Cream Cheese
2 Tbl Sour cream
1 Cup Salsa
1 Cup Water
1 Cup of Cheese (Mexican blend)


1. Preheat oven to 350 degrees. 2//Bring a pot of water to boil and cook the lasagna noodles al dente. 3//Cook ground turkey or beef over medium heat until cooked through, add beans, corn, pepper, tomato and spices 4//Grease a 9X9 pan, layer cooked noodles, top with meat/bean mixture, drop spoonfuls of cream cheese/sour cream mixture on top, then layer again with noodles, and lastly meat mixture 5//Mix the salsa and water together and pour over lasagna, cover pan with tin foil and cook in oven for 40 minutes. 6//Top with 1 Cup of cheese and set back in oven until cheese is melted! Serve with sour cream and avocados
