Creamy Spinach Lime Taquitos

These are knock your socks off good!!!!! I love the crunch from the baked tortilla, & the honey that has been married with lime cilantro & garlic & spinach, oh it is so so good! & what is even more appealing, these are quick, like real deal 30 minutes quick!

Servings 2//Makes 4 Taquitos

2 Chicken Breasts, or 1/3 of a Rotisserie Chicken, Cooked and Shredded
1/4 Cup Honey
2 Handfuls Spinach//rough chop
1/4 C Cilantro, diced, plus more for garnish
1/2 Tomato Chopped
1 Lime, Juiced
3 Tbl Sour Cream
2 Tbl Cream Cheese
2 tsp Garlic Powder
2 tsp Chili Powder
2 tsp Cumin
S&P to taste
3/4 C Colby Jack Cheese, grated


1. Heat oven to 420 degrees. Cook & shred Chicken Breasts *(I used a Rotisserie Chicken & shredded the meat)

2. Combine the rest of the ingredients: honey, spinach, cilantro, tomato, sour cream, cream cheese, S&P, seasonings & lime juice

3. Place 3 Tablespoons of mixture onto the outer edge of tortilla, spread grated cheese on top and roll up to form a tight taquito

4. Arrange on a baking dish, seam side down and bake for approx. 15 minutes

5. Garnish with cilantro and serve with sour cream, salsa, or guacamole
